  • 2 1/2 pounds (about 6-8 large) russet or Yukon Gold potatoes, peeled and cut into chunks

  • 4-6 cloves garlic, minced

  • 1/2 cup unsweetened almond milk (or any plant-based milk)

  • Salt and black pepper to taste

  • Place the potato chunks in a large pot and cover them with cold water. Add a pinch of salt to the water.

  • Bring the water to a boil and simmer the potatoes for about 15-20 minutes, or until they are fork-tender.

2. Prepare the Garlic:

  • Add the milk a little at a time until you reach your desired creamy consistency. You may not need to use all of the milk.

5. Season and Garnish:
