Instructions:

1. Boil the Potatoes:

  • Place the potato chunks in a large pot and cover them with cold water. Add a pinch of salt to the water.

  • Bring the water to a boil and simmer the potatoes for about 15-20 minutes, or until they are fork-tender.

2. Prepare the Garlic:

  • While the potatoes are boiling, in a small saucepan, heat the minced garlic and vegan butter or olive oil over low heat. Cook for 2-3 minutes until the garlic becomes fragrant. Be careful not to let it brown.

3. Mash the Potatoes:

  • Drain the cooked potatoes and return them to the pot.
