Low-Carb Pecan Pie Bars

  • 2 cups pecan halves

  • 1/2 cup granulated erythritol or sweetener of your choice

  • 1/2 cup sugar-free maple syrup

  • 1/3 cup melted coconut oil or butter (for a non-vegan version)

  • 2 large eggs (for a vegan version, you can use egg replacers like flax eggs or aquafaba)

  • 1 teaspoon pure vanilla extract

  • 1/4 teaspoon salt


Instructions:

1. Preheat the Oven:

  • Preheat your oven to 350°F (175°C).

2. Make the Almond Flour Crust:

  • In a mixing bowl, combine almond flour, coconut flour, melted coconut oil or butter, sweetener, and salt.

  • Press the mixture into the bottom of a greased 9x9-inch (23x23 cm) baking dish, forming an even crust.

  • Bake the crust in the preheated oven for 10-12 minutes, or until it's lightly golden. Remove from the oven and let it cool slightly.

3. Prepare the Sugar-Free Pecan Filling:

  • In a separate mixing bowl, whisk together granulated erythritol or sweetener, sugar-free maple syrup, melted coconut oil or butter, eggs (or egg replacer), vanilla extract, and salt until well combined.

  • Gently fold in the pecan halves.

4. Assemble and Bake:

  • Pour the sugar-free pecan filling evenly over the pre-baked almond flour crust.
